Ingredients:

For the Soup Base:

  • 4 cups pork or chicken broth
  • 2 tbsp Yen Ta Fo sauce (fermented red soybean paste)
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • 1 tbsp fish sauce
  • 1 tsp minced garlic
  • ½ tsp chili flakes (optional, for spice)

For the Toppings:

  • 200g rice noodles (thin or wide)
  • 100g fish balls
  • 100g squid, sliced
  • 100g firm tofu, cubed
  • 1 cup morning glory (water spinach) or bok choy
  • 1 boiled egg (optional)
  • Fried crispy wontons or crispy tofu skin
  • Fried garlic in oil (for garnish)

Instructions:

1️⃣ Prepare the Broth: In a pot, bring the broth to a boil. Stir in the Yen Ta Fo sauce, vinegar, sugar, fish sauce, and garlic. Simmer for 5 minutes.

2️⃣ Cook the Noodles & Toppings:

  • Boil rice noodles according to package instructions, then drain.
  • Blanch the morning glory or bok choy in hot water for 30 seconds.
  • Cook the fish balls, squid, and tofu in the broth for 2–3 minutes.

3️⃣ Assemble the Bowl: Place the cooked noodles in a bowl, ladle over the hot pink broth, and top with seafood, tofu, and greens.

4️⃣ Garnish & Serve: Add crispy wontons, fried garlic, and a boiled egg if desired. Serve with extra chili flakes, vinegar, and sugar on the side.
